SUPER QUICK AND SIMPLE VEGAN CHOC CHUNK COOKIES
The easiest and quickest vegan cookie recipe you're likely to find! Oh did I mention they're bloody delicious? :) They're made with coconut oil giving them a slight coconut flavour - not too strong though for any non-coconut fans! It also makes them nice and moist while being slightly crunchy on the outside. All the best cookie elements!

You can use any kind of dairy free chocolate for the chunks (or chips). I used Moo Free because it's my fav :)
Here's what else you'll need!
(makes 10 big cookies)
- 4 tbs almond milk (or any non-dairy milk)
- 8 tbs coconut oil
- 225g dark muscovado sugar (it has such a great taste! but any kind of sugar will do)
- 1 tbs vanilla extract
- 450g flour
- 2 tsp baking powder
- 1/2 tsp salt
- 100g choc (chopped into chunks)
- Preheat the oven at gas mark 4
- Mix the first 4 ingredients in a bowl (you may want to warm the coconut oil slightly)
- Sift the flour, baking powder, and salt in a seperate bowl
- Add the wet ingredients into the dry and mix well
- Mix in the chocolate (I found this easier to do by hand)
- Roll into 10 balls. Press down when you put them on the baking sheet so they go flatter
- Pop them in the oven on a baking tray and bake for 7-9 minutes, or until the edges go golden brown
