While we haven't quite shaken off the winter blues here's a great winter warmer to comfort us in these cold days! It's super herby and garlicky - always a good thing! I opted for wild rice mix but you can just use brown rice if you prefer :)

 You will need
  • 1 medium white onion
  • 4 crushed garlic cloves
  • 1 large carrot
  • 2 sticks celery
  • 1 tsp dried thyme
  • 1/2 tsp dried tarragon
  • 2 tsp paprika
  • 185g rice
  • 80g red lentils
  • 1.5 litres vegetable stock
  • 1 can butter beans
  1. Saute the onion for 5 minutes or until softened. Add the garlic and stir for 30 seconds
  2. Add the carrot, celery, thyme, tarragon, and paprika. Stir well
  3. Add the rice, lentils, and stock 
  4. Bring to a boil, then simmer for about 25 minutes
  5. When the soup has thickened add the butter beans until heated through.
  6. Serve!
